Pork Chops with Savory Sauce, Potatoes & Asparagus

I like to pair these pork chops with potatoes and roasted veggies (asparagus is my fav! and they can all be roasted in one pan!) for a healthy, easy, ready-in-35-minutes dinner! 

Ingredients:

  • 4 pork chops 
  • 1 red onion, chopped
  • 2pkg Beef broth concentrate 
  • 1 Tbsp. Thyme, leaves removed from stems
  • 2 Tbsp. Dijon mustard 
  • 1 bunch of trimmed asparagus (or 
  • 6 small Yukon potatoes 
  • Olive or canola oil 
  • Salt and pepper to taste

So you only have 35 minutes to prepare dinner, your kids are getting seriously hangry, and the in-laws are coming over,? No worries. This dinner has everything you need: tender pork chops with home-made sauce, potatoes and asparagus. Your pee might smell funny (did you know asparagus does that?) but your bellies will be full!

Directions:

Preheat your oven to 450° 

Cut the potatoes into half inch cubes. Toss the potatoes with a drizzle of oil, season with salt and pepper, and lay them out on a baking sheet. 

Roast in the centre of the oven, flipping them around halfway through cooking. - 25 minutes

Meanwhile toss the asparagus on another baking sheet with a drizzle of oil and salt and pepper. Toss into the oven for 15 min. 

Season the pork chops with Salt and pepper. Heat a pan over medium–high heat. Add a drizzle of oil and when the pan is hot, add the pork chops. Cook for two minutes per side, or until golden. (if the pork isn't cooked through at this step, don't worry because it will finish cooking in the oven.) 

Transfer the pork to the same baking sheet with the asparagus and place them back in the oven until the pork is cooked through, 5+ minutes.

While everything is finishing up in the oven, make the sauce. Add a drizzle of oil to the same pan that you cooked the pork in. Add the onion and thyme, cooking until the onion is softened, about 5 minutes. Stir in the mustard, broth concentrate and 1/2 cup of water. 

To serve, thinly slice the pork and serve with a drizzle of the sauce from the pan. Enjoy!
