Carrot and ginger soup

Everyone knows carrots are great for your eyes, but did you know that ginger has a long history of use for relieving digestive problems such as nausea, loss of appetite, motion sickness and pain? This soup is hearty, healthy, and good for the tummy!

Everyone knows carrots are great for your eyes, but did you know that ginger has a long history of use for relieving digestive problems such as nausea, loss of appetite, motion sickness and pain? This soup is hearty, healthy, and good for the tummy!

Serves 6 - 25 minutes 

Ingredients

  • 2 tablespoons butter
  • 1 clove garlic, crushed
  • 1 onion, chopped
  • 6 cups stock (chicken or veg.)
  • 10 carrots, chopped 
  • 4 stocks of celery, chopped (with leaves) 
  • 1 teaspoon coriander
  • 1/4 teaspoon cumin
  • 1 tablespoon grated fresh ginger
  • 1 bay leaf
  • 1 cup milk 
  • Salt and pepper 

Directions

In a sauce pan on medium-low heat, melt butter. Add onion and sauté for five minutes then add garlic and sauté for three more minutes. Add stock, carrots, potatoes, celery, coriander, cumin, ginger and the bay leaf. 

Bring to a simmer, covered and let it simmer until vegetables are tender and soft. (15-20 min) 

Allow soup to cool slightly, then blend until smooth in a blender or food processor. Gently stir in milk and season with salt and pepper. 

Reheat as necessary.
