Sneaky Double Chocolate Muffins (Zucchini)
Zucchini-chocolate muffins
Yield: 12 Time: ... If you have kids, this doesn't matter since they make everything longer than it should be anyway.
INGREDIENTS and DIRECTIONS
*Preheat your oven to 350 degrees.
Coat a muffin tin with cooking spray.
Mix these ingredients in a medium bowl:
•1 cup flour
•1/2 cup unsweetened cocoa powder
•1/4 tsp. baking soda
•1/2 tsp. baking powder
•1/4 tsp. salt
•1/4 tsp. ground cinnamon
•3/4 cup any chocolate chips
Mix these ingredients together well in a large bowl:
•2 large eggs
•1/2 cup vegetable oil
•1/2 cup granulated white sugar
•1/2 cup light brown sugar
•1 tsp. vanilla extract
Add to the wet bowl:
•1 1/2 cups shredded raw zucchini, don't drain off excess water.
Mix.
Add dry ingredients to the wet and mix to just combine.
Bake in the centre of the oven for 20 minutes (check at 15min)
*They are done when a toothpick inserted into the center comes out with a few crumbs stuck to it. The Residual heat will continue to bake them. Remove from the oven and let them cool for a few minutes before placing them on a cooling rack to continue cooling.
