Overnight Chia Pudding.
Overnight Strawberry Chia seed pudding
Ingredients
1 cup strawberries, fresh or frozen, thawed
1 banana
1/4 cup canned coconut milk
1/4 cup honey
1 teaspoon vanilla extract
1/4 cup Chia seeds
Directions
In a blender or food processor, blend the strawberries, banana, coconut milk, honey, and vanilla extract on high speed until creamy and smooth, 30 to 60 seconds. Transfer to a bowl and stir in the Chia seeds.
Cover the bowl and refrigerate overnight so the pudding sets and chills.
Serve the putting as is or for a smooth pudding, blend it for 60 to 90 seconds on high speed until the Chia seeds are completely puréed.
If packing for lunch use an ice pack!
